6g salted butter (about half tsp) – 40 calories


This really is not that difficult, EXCEPT you want to make a proper omelette. But a proper omelette is actually higher in calories thanks to its high butter and oil content, so in the spirit of not getting fat, we will stick to this today.


Start by breaking your eggs into a bowl, then add into it, your cream and cheese. Make sure to fine chop your cheese with a knife, or grate it completely into the egg bowl, and mix well. In your pan, add the butter, and then once it has completely melted, immediately add your egg mix, and stir vigorously. Only keep the pan on the heat for 15-20 seconds, take it off and keep stirring. This is done this way to fully incorporate the cheese, eggs and cream. The residual heat will continue to cook the eggs for about 30 seconds, after which you can return it to the flames, stir some more continuously, and then let it cook.


do not allow your eggs dry out on the pan or they will be dry, you want it still looking like A LITTLE bit of the mix is not cooked, because when you take it off the pan, the residual heat will finish it off.


Grill your toast, and then spread your eggs on and top with your smoked salmon and some fresh parsley leaves.


For a less calorie version, check below. The recipe below is still as filling and is 310 calories less than the one above, and all I did was use 1 egg, cut out the cream, butter, parmesan cheese, and cut a thinner slice of bread.

This recipe is very simple.


STEP 1 - Dry-fry your egg on a nice non stick pan. A good non stick like the copper stone frying pan with do the trick. cover with lid, and allow steam to cook egg, keep covered for 2 minutes on low heat.


STEP 2 - Grill bread


STEP 3 - Assemble.
