Peel, wash and cut your sweet potatoes into strips.
get a pot of water to reach a rolling boil, then blanch your sweet potatoes in for 4 minutes. Drain and then spread on a baking sheet. season with:
1 tsp allspice
1 tsp smoked paprika/paprika
1/2 tbsp dried parsley
10ml oil (82kcal)
Put into a 180ºC preheated oven and bake for about 25 minutes or until outer layer is slightly crisp and dry while the inner layer is soft and ohh so good to chew.
This is a great addition to a meal, or a lovely snack to munch on. Asides being delicious, baking sweet potatoes saves so much consumption of unnecessary calories that would have been consumed if deep fried. your basic deep fried version is almost 300 calories more!!! That is even more than our baked plantain snack.
